Just about every post from Jiggy and RainyDayNinja has me thinking, "man, I would really enjoy sitting at a table with those guys!"
I've had the honor of playing at a table with Jiggy, GMing him, and finally (as of a week ago) playing at table he was running. In all cases, I'd agree that it was a great experience (really had to pull a fast one to get out of The Icebound Outpost while he was running!).
Personally, I'd love to be able to sit at a table with any of the campaign leadership (though GMing them might cause me a few jitters!).
But, really, there are countless numbers of posters here that I'd religh the chance to get game with (including Mr. Baird... who really is only 5 hours away from me).
One of my goals, when I get the chance to do any traveling, is to find a PFS table to sit at. That, and visit a MLB park that I haven't been to.

Oh, and I'd really like to see the whole Kellogg gang in action together... at a table I am playing at. The thought of them playing together at a table I am GMing sounds a little scary (but fun, nonetheless!)
At Con of the North this year, we played together in Fortress of the Nail, with his LG Tiefling cleric of Iomedae, and my LG Aasimar cleric of Torag. We kept fighting over who got to roll the Diplomacy checks.
But don't get me started on how he messed up The Disappeared...

I have enjoyed Mike Brock and David Shaw as GM. I would love to play at a table with Mike. I have yet to play or be GM'd by Kyle or Nani Pratt, which I would dearly love to be as I have heard how awesome they are at a table.
Total fantasy table. Robin Williams, Bill Cosby, and Vin Diesel. No need to play just watch.

I'd very much like to just pop over to the US and see what the PFS culture there is like. Do a tour of the country or something. Ah, it's fun to daydream.
Also, I'm still very saddened by the fact I only got a very brief moment to meet Alistair Rigg at Ropecon this year. Would have loved to play at a table of his, but unfortunately my own table overlapped with his Bonekeep.

From my last few conventions I've met a few folks that I like playing with. Here are more than a few that I'd like to sit with...
Eric Brittain et al. -- After our meeting at Gencon, Eric's easily one of my favorite Pathfinder people. Inspired by San Diego's "Southern Andoran" table, our area has started up a "Real Housewives of Taldor" team; I imagine it would make Eric & company proud.
Katie Sommer -- If she can ever take a break from painting miniatures for Reaper and hang out with us.
Todd Morgan -- I realized that I haven't actually played with Todd, despite having each other GM for us at various different tables.
Kyle Baird -- It's only fair that I get another chance to kill his goblin, but as a player this time instead of as the GM. And if Todd GM'd the table, I'm pretty sure he'd rule that it's not PVP to include Garble in my fireballs.
Al Rigg -- Al's definition of the Order of the Cockatrice alone was enough to make me want to play alongside his characters. It also helps that he's awesome.
Wes Brock -- Haven't seen this guy since he destroyed the 14-15 tier of Siege; it'd be great fun to play with him for a change of pace.
Kyle Elliott -- Even though we get to play Way of the Wicked twice a month, it isn't enough.
Preston Hudson -- Despite being my VL, I've never actually played with the guy!
That's only a handful of the people I know by name, not to mention the various forum people that I need to game with.

People I would like to play alongside would be
Kyle Baird - from his forum posts actually seems like a pretty laid back guy and I think would be fun to play with.
Jiggy - Seems pretty up to date on the rules even if I dont always agree with him on different things
People I already have played with but would do so again
Al Rigg - My VC and quite a fun guy to play with currently playing WoTW with him most weeks.
Mike Brock - played bonekeep under Mike and it was quite a fun experience
Daniel Flood - VC of Brisbane and an amazingly amusing GM
Issac and Chris from NZ - Good guys and quite amusing at the table.
Matt Goodall - Ran Cult of the Ebon Destroyers for me
David Metcalfe - Quite a fun guy as well playing a few homegames with him.

I'd also love to run a table for anyone I have met here, but not in real life AND hates my guts or thinks it wouldn't be a fun time. You all know who you are! ;-)
I once feared the Baird. Then I played at his Grand Melee table at PaizoCon 2011. I swapped out to a higher-level character upon learning of my GM's identity.
I had a great time. Some hot d20s helped me not die, as in multiple longsword crits in a full-attack hot. "ARE YOU NOT ENTERTAINED???"

Hmmm, this is a weird goal but I got a taste for this when I darn near did this when running the 4e Delve last time I was at GenCon.
I want to GM a table with a Paizo employee...and then kill their character :) .
I also hear all these stories of fun people to play with, and it would be awesome to play with/run for them

I've played at some pretty memorable tables with Al Rigg, Pirate Rob, Derek Boobyer, Zrinka (she was GM), Chris Mortika, Jason Leonard, Thea Peters, Rene Ayala, Rene Duquesnoy(sp?), Mike McKeon, LeDon Sweeny, Daniel Luckman, Mat Black, Kyle Baird, Ryan Bolduan, Aaron Koelman, Ryan Blomquist, David Haga, Jiggy, Silbeg, and I'm sure many others that have slipped my mind.
I'd love to play at any of my fellow VO's tables, including but not limited to Eric Britain, Nani Pratt, John Compton, Mike Brock, and many others.
I have trouble remembering names sometimes. But anyone who is quirky like me, likes a fun pun or two, and isn't going to argue rules or be a jerk.

And after thinking of the original question some more, I'd have to add a 'perfect build' table: Rogue Eidolon playing a Rogue (or any of the Rogue like classes or archetypes), Rynjin playing a monk, Treantmonk playing a wizard, and TarkXT playing a cleric (or an enlarged trip fighter. Or an enlarged trip cleric! ^_^ )

Walter Sheppard, because he seems to be a stellar GM with a style similar to mine.
Baird, because even if I die, it'll be a story worthy of telling.
Mike Brock, because I want to run a Sword Saint dressed in black and gold.

Azzolino, because, well, he's Azzolino. And he got me started in PFS and I've never had anything less than a stellar time at his tables.

There are too many North American personalities to single people out.
I lament the fact that I've not had chance to play at a table GMed by Thod or Dave Harrison yet; maybe that will change in 2014.
I am surprised that Richard Pett hasn't been mentioned in the thread so far; his running of WBG2 at PaizoCon UK this year was glorious...

You are the only female 5-star GM (so far). People probably associate that with being fun at the table.
I was going to make a crack about them being really wrong, but I already put you on my list of people who are awesome at the table, so that wouldnt really work. ;)
