Flying mounts are a tough angle - you might be better off focusing on a fly-able character first and then aspire to a flying mount later. The essence of a Valkyrie is a celestial warrior-woman chosen by Odin or Freya to gather the souls of worthy dead. The mounted thing isn't quite as essential even if its how they are often portrayed.

If a flying character is okay, bypassing the need for a flying mount, you might want to consider teh strix.
That raven symbolism could play into that "bearers of the dead" flavor quite nicely. :)
Alternately, there are some 3pp products that have PC-friendly versions of harpies somewhere on the store here.

The Paladin, Cavalier get you there (with horseshoes)
The Celestial Companion eventually gets you there.
The Summoner gets you there much faster. But only if you're small to start.
The green faith line of feats gets you there (if you add boon companion). I keep meaning to write that feat down but I don't.
NOte: Large flying creatures are hampered in PFS in numerous modules. Some are entirely underground, some are entirely in 5' hallways.
Now my suggestion - go for the whole Valkyrie angle with Aasimar. Go Fighter/Archer. Take the Trail of feats to give yourself wings and get there on your own at level 11. On your way you get a group of resistances, a healthy number of feats for the bow, and ranged combat maneuvers. You don't have to worry about large templates and small corridors.

Well, it is not PFS legal, but the Sable Company Marine archetype for rangers seems perfect for this concept.
Basically, you trade away your first instance of favored terrain and hunter's bond (well, more like trade away having any other choice with hunter's bond) in order to get a Hippogriff as an animal companion.
It is a fairly decent animal companion with 3 primary attacks (after effective druid level 4), a fast flight speed (50-100), and darkvision. It starts off large and stays there, so you can use it as a flying mount from the instant you get it at level 4.
Another, PFS legal concept would be to play a half-orc and take the Beast rider feat at level 7. This feat gives more options for animal companions, including elephants, rhinos, stegosauruses, triceratops, and most particularly pteranodons. Not sure how half-orcs and dinosaurs would fit into the whole 'divine beauty of battle' thing.
Maybe an inquisitor with animal domain would work too, since that doesn't restrict you to any particulate animal. Just take a Roc and you will be fine.
