Why always watering down any obstacle or small difficulty would make the game more enjoyable?
If our characters never have to make some choice and suffer some discomfort they are not larger than live heroes, they are babies eating pre-digested mush.

I refuse to be a robot, but if the players enjoy it, I don't mind puking in their mouths.

It is not watering down every difficulty, it's a question of whether the particular difficulty is an interesting one to deal with. Losing because the dragon eats you is an interesting loss. Losing because you had your holy symbol on a necklace instead of in your hands because that was your interpretation of the rules is a lot less interesting.
At a certain point, trying to be completely simulationist merely devolves into pedantry.

Dear gods, that thing isn't just going to turn undead, it'll turn the living too!
(and meh, I know it's called "channel energy" nowadays and does damage rather than turning, but it doesn't sound anywhere near as good)
