I was DM-ing my first custom Pathfinder adventure with Beginner Box rules, and we couldn't find anything on how many times wizards and clerics can cast their prepared spells. As a DM, I want to know how often a cleric can heal an ally, or how often a wizard can insta-hit a target with with magic missile for 1d4+1 damage. I'm a very "by the rules" type of guy, so it's important for me to make sure we're playing the game "right." I know that's not really a thing with RPGs, but as close to "right" as we can get would be peachy. If you could even point out the page number in the Beginner's Box Hero's Handbook, I'd greatly appreciate it.

Casting a prepared spell wipes it from your mind for that day, until you rest and prepare it again. For example, the Spells section of the cleric class (page 16) says:
You can cast cleric spells (see page 18). Every morning, you spend an hour praying for the spells you want to cast that day. This is called “preparing your spells.” When you cast a spell, mark it off from today’s list of prepared spells. Each day you can pick different spells—they don’t have to be the same ones each time.
(The wizard class (page 26) has basically the same info in its Spells section as the cleric's Spells section.)
The 1st-level Cleric Spells section (page 19) also says:
You can always swap a prepared 1st-level spell for a cure light wounds spell—just cross off the prepared spell from your list that day and cast cure light wounds!
So even if you swap a prepared cleric for a cure spell, you can only cast each prepared spell once (either as the spell you prepared, or converting it into a cure).

Hi, the Hero's Handbook on p19 says
You can prepare one 1st-level cleric spell per day from the list of spells on this page. If your Wisdom ability score is 13 or
higher, you can prepare an extra 1st-level cleric spell each day! Write this number of 1st-level spells per day in Section K.
You can always swap a prepared 1st-level spell for a cure light wounds spell—just cross off the prepared spell from your list
that day and cast cure light wounds!
and the wizard section clarify it for wizards as well
