What are the stats for pets that were bought with gold? I assume that since they're not familiars granted by a class you don't get any skill bonus from them, but how many HP do they have, etc? Just in case my character's new pet monkey gets hit.

Monkeys are highly social creatures. They spend the majority of their day searching for food.
Most of the time, a non-familiar version of these animals will not provide enough tactical benefit in combat to warrant needing to know their stats beyond AC. If they get hit, they are most likely dead.
No. Those benefits are for familiars only, not random animals. If you could get the benefit that way every adventurer would walk around with a sack full of pets.
Also, how did they get "+10 Climb" when the monkey's Str is at a -4? The only way to get that is if they used the monkey's Dex for Climb instead of Str, but I can't find any special ability that lets you do that.
rules state any creature size tiny or smaller use dex instead of str for cmb/cmd. maybe there is something like that for climb also (i dont have time to look at the moment)

I figured there was something like that for small/tiny animals, but that still doesn't explain how it has a +10 to climb unless it has some special ability that lets it use its Acrobatics for Climb.
Alright, thanks. That explains the climb speed but I'm not sure why they didn't include Swim +2 on the monkey's stats. Maybe it was just an oversight.
Because a monkey has no ranks in swim, nor does it have a racial bonus to swim. Skill lists usually only include the skills that have racial modifiers, or ranks in them. It doesn't include every skill. As the monkey has only its ability modifier to Swim, there is no real reason to list it.
