The core hardcovers are pretty much setting-neutral. For Golarion-specific stuff, you need to use products from the Campaign Setting side. The hardcover Inner Sea World Guide is the best source for general campaign world stuff, but it doesn't get into weather and climate all that much.
Varisia is analogous to the Pacific Northwest: wet and temperate near the coast, until you get to the mountains (or, for Varisia, the Storval Rise). On the other side, it becomes arid.
I recently played through the Rise of the Runelords adventure path, set in Varisia. The weather described in the modules matches Haladir's description: temperate in southern Varisia, rainy near the coast. I will add that the northern mountains are subject to snowstorms.
Western Varisia, such as Korvosa and the Cinderlands, are the setting of the Crimson Throne adventure path, but I have not played through that one.

New Orleans is much more warm than Magnimar would be.
