When writing our submissions, should we restrict ourselves to flip-mats that are currently in production? I would assume the intention is to sell more flip-mats, and the out-of-print mats wouldn't accomplish this goal.
I'm specifically asking because I like the large private room in the Tavern map, but I can make the Country Inn map work with my design idea.
The only thing I can think of to do with a PDF flip-mat is to use it in an online setting. That or print it on a big expensive poster printer, but that would cost more than a new flip-mat.

For large maps that aren't available in physical form, I have had decent luck this way:
Import the picture into Visio*
Stretch the picture so that it has the correct physical size
Let Visio print it across multiple pages onto cardstock
Trim the white borders off the printed pages and tape the separate pieces together on both sides of the seam.
Fold the map up the using the same map-fold the flipmats use.

True. Well, I have some clarification. If someone from the publishing team could weight in on this, that would be useful. For now I'll focus on the "in-print" mats, but not discount the out of print mats for really useful or appropriate maps.
Look at it from a GM's perspective. Would you want to be able to use that flip-mat that you just got that's easy to find, or one that might not even be around anymore?
