I'm gearing up to get a Kickstarter beginning soon that focuses on flight. One of the things I've been doing in downtime is popping in various movies that really capture a sense of flight, where you're mounting up, strapping in, and heading off into the sky. So far I've gone through:
E.T.
Neverending Story
Star Wars
Empire Strikes Back (asteroid scene)
Return of the Jedi
Avatar
Avatar: The Last Airbender (the series, NOT the movie)
Top Gun
The Rocketeer
Kiki's Delivery Service
The Harry Potter movies (at times)
What other movies am I missing? And what I'm looking for are movies that really get at the sense of flight. Just because there are planes in the sky isn't enough. As much as I like Air Force One, it isn't really about flying.
It's an incredibly cheesy movie, but the Supergirl movie actually has flying scenes that make any of the Superman movies look extremely stiff and unnatural. Say what you will about Helen Slater in that role, but she nailed flying.

Any suggestions?
For a first-person view, look at the opening sequences of Patriot Games and Red Riding Hood. Patriot Games in the cinema made me feel seriously air-sick, Red Riding Hood less so but noticeably. Also the plunge into the pit in Wrath of the Titans was vertigo-inducing.
I would think there must be some IMAX films about flight, probably check the National Air & Space Museum.
IMAX films would also be far more immersive with the larger screen if you were really looking for films that feel like your flying, instead of Narrative films that have flying scenes in them.
If you're near one of the Disney parks in Orlando Florida or Anaheim California, check out the "Soarin'" rides. They use some motion tricks in the seats, but mostly they're just extremely well-designed movies that simulate flight.

Absolutely right on the Soarin' rides. Almost worth the price of admission just for that ride alone. Simply amazing.
The fact that there are even scent effects added to the surround sound adds an amazing depth to the experience.
