AGoT is an excellent mod for CKII, and one of the most popular, with one of the largest development teams. It actually fits pretty well with the base game, which is at least as much about intrigue, dynasties, and characters as warfare.
They were able to make it so different and fit the books so well that if a person played CKII vanilla and then tried to play AGoT, they would likely be lost (except they would be familiar with the UI).
I love how moddable Paradox Interactive makes their games.
EDIT: Though the mod I'm most looking forward to is The Elder Scrolls mod, called Elder Kings. It's much more ambitious since it doesn't fit into the vanilla game as well (as TES games are first-person with high fantasy), but from what I've seen it looks well-done and innovative.
