How do you calculate CR and XP for NPC classes.
For example, if I wanted to make some guards that were level 5 Warriors and Adepts, what numbers do they have?
For "NPC class only" you set the CR at total class level -2. In your case, these Warriors and Adepts should be CR 3.

Gorbacz has it completely right, though I find the CR doesn't balance well at higher levels. (One could argue NPC classes shouldn't be higher level.)
A 10th level Warrior (or Adept, etc.) is more like a CR 5 (especially if given CR 5 worth of equipment).
Normal stats (w/ racial +2 & bumps at 4th & 8th) would be Str 16 Dex 12 Con 12... Wow... And this is supposed to be CR 8, the equivalent of a Stone Giant?
Also, an Ogre Warrior 10 is only CR 8, which funnily enough is the CR of the 10th level Human Warrior. Hmmm.
As the levels get higher, the Ogre's CR is actually lower than the human's. Ogre's only get .5 CR per NPC level due to racial HD.
Hmm.
So, one could houserule that all the NPC classes suck to the point they don't ever give a +1 level=+1 CR at any point, even to creatures without racial HD.
It makes the flow of CR awkward, but think about handwaving CR as levels go up. (The chart of CR/damage/AC/h.p. in the back of the Bestiary could be of good service here.)

Agree with Castilliano here, that chart is a lot more accurate a guide than the book. Though i usually end up with higher CR's than calculated. Especially when orcs are involved. Ferocity makes for INSANELY tough barbarians.
A level 1 orc with nothing but class changed from warrior to barbarian becomes roughly CR 2
HP - slightly below average until ferocity is considered
AC - average before rage
High attack - with his falchion ranges from average to well above average depending on where he is in regards to his rage.
Average damage - just above average
Saves - just below average
