Hippocentaurs.
I was inspired by wikipedia's Centaur article, which begins:
In Greek mythology, a centaur (from Greek: Κένταυροι – Kéntauroi) or hippocentaur...
And now I want a creature with the torso of a man mounted upon the body of a hippopotamus! It must be done or our lives will never be complete! (...Or maybe I'll just reskin an advanced centaur and give it trample or something.)

No you should give them capsize. Hippo's kill more people then any other animal in africa each year. Mostly by knocking over their boats

I would like to add:
Animated Siege Engines - One thing it's an animated object balista-like that do 1d8 ranged damage, tops with a range increment of 20ft; another it's a scaring real animated ballista the shoots for 3d8 damage in a range of 120ft! Imagine animated cannons!
And i reinforce the Jacklope - what our drunken gunslingers see in the desert at night, and some even claim to had mounted one - and skilled alchemists taxidermists display proudly in their stores!? It' the famous Jacklope!

I'd like to see a write up of Spiritual Companions for the Druid. I've always loved the Shaman class in 4th Edition and I felt that the shaman options of the druid didn't quite fit the bill. I'd like them to be spirits of the wilderness and the seasons instead of animals. Things like lesheys or lesser kami or a spirit animal made corporeal. I think it'd be really cool to have that.
Sorry for the quick sidebar but, have you by any chance checked out the Shaman class for Pathfinder in the new issue of Kobold Quarterly?

Stats for Formians would be nice.
I would also like the "Greys"(with telekinesis and telepathy) type of aliens or even "little green men" type.
I'd kind of like to see the Formians myself. And as for the latter, while they'd be nice, you could probably do something along those lines right now with a derro with enough sorcerer levels.

More generally? The short rhymes that accompanied goblins and Attic Whisperers in Rise of the Runelords were really sort of awesome at setting the mood for upcoming monsters. I'd like some more Monsters with accompanying rhymes and other flavor for making them feel unique in the setting.

I just thought up of something I'd want to see in Bestiary 4! An mead monster! A creature that inhabits a bar for years disguised as a magical barrel of never-ending mead. While in this state, it feeds on the merriment of its patrons, until one day, it grows arms and legs and begins ransacking the bar! Its primary attack is a blast of magical mead that causes those in its cone to become inebriated. The mead monster also has damage reduction 5/impromptu weaponry and drunken boxing.
A more advanced version of this creature is the ale monster, followed by the infamous dwarven mead monster.

However ALL of these were inspired by older sources. For example, the kuo-toa and illithid came from H.P. Lovecraft (as so many other good monsters). Displacer Beast came from the Coeurl in The Voyage of the Space Beagle by A.E. Van Vogt.
In such cases, you can go back to Ur ("oldest") version that does not have silly IP restrictions and come up with your version. Paizo authors have already done this to some extent.
Yuan-ti --> Serpent Folk
Gith --> Denizen of Leng
My advice is if you want to ask for copyrighted critters is to do some research and find out from what public domain source they were derived. Only about 1 in 10 was really just made up out of whole cloth.

The coeurl was in fact used in an Adventure Path (Legacy of Fire?) but I don't think they have permission to reprint it. Same with Penny Arcade's Deep Crow which was in Second Darkness (I think?).
Correct! The coeurl was in The End of Eternity; Pathfinder #22 and the deep crow was in Endless Night; Pathfinder #16.

You guys just reminded me:
Advanced/evolved forms of flumphs and akatas.
Kind of along the lines of xenomorphs and metroids(a la the Gameboy installment that is).
Flumphs might grow into different forms appropriate for different roles and tasks, possibly with some sort of "humanoid-ish" variant meant to serve as go-betweens with actual humanoids. Akatas might have different morphologies depending on what they creatures they were incubated within!

More luck based monsters would be nice.
A monster that creates force fields or barriers of somekind as a supernatural power.
More light based/themed monsters.
A creature that changes it's elemental strenghts and weakness(es) each round or when it get's hit by what it is weak too.
A creature who's DR changes each round or when it get's hit.
New (improved)familars that are of the Monstrous humaniod, Ooze, Plant, Construct, Fey, or Aberation types.
Around five (or more) playable 0HD races.
At least 15-20 Fey and at least 8 more Elementals.
More Angles, Azatas, Proteans, Qlippoths, Agathions, Oni, Azura, and Inevitables.

I remember reading somewhere about a company or supplement that had the idea of undead elementals. Sounded interesting.
As for luck based monsters... eh... Pugwampis left a poor taste in my mouth. They are still the only monster that killed an entire campaign. Three hours of the same combat, everyone rolling poor because of those damned creatures. Shame too.

I still can't believe the mantis is getting no attention at ALL.
Everyone wants more scorpions, spiders and beetles but nobody actually cares for more unique mantis monsters at all...
There isn't an insect as cool as the mantis, and only one mantis monster (I don't count indestructable gods as creature) is really a shame compared to the many spiders and scorpions in the books.
Is this because of the religion fact? Many other forums told me that Mantis-monsters can't be made because its against some form of american religion?
