If something grapples you and you only have your two-handed weapon in hand, can you draw your back-up one-hander and make attacks with it?

This was changed from 3.5. You can use one-handed weapons while grappled now.

Actions while grappling wrote:
You can inflict damage to your target equal to your unarmed strike, a natural attack, or an attack made with armor spikes or a light or one-handed weapon. This damage can be either lethal or nonlethal.
Actions while being grappled wrote:
Instead of attempting to break or reverse the grapple, you can take any action that doesn’t require two hands to perform, such as cast a spell or make an attack or full attack with a light or one-handed weapon against any creature within your reach, including the creature that is grappling you.

So it says you can only cast spells with the components you have in hand, does that mean you can't use your freehand to grab more?

Casting while grappled is its whole other thing. There is no clear rule, unfortunately. Instead, there are multiple conflicting rules strewn throughout the CRB.
