For an upcoming campaign I'll be playing the cleric and I want to make sure I have this right.

Spells cast that have a added bonus depending on level go off of the caster level not the first level you can cast the spell? For example for Cure Light Wounds its 1d8+1/level (max +5) so at level 3 I would do 1d8+3. Now for Cure Moderate Wounds 2d8+1/level (max +10) would I do 2d8+3 because I'm level 3 not 2d8+1 because its the first level I can cast the spell?

You've got it. References to level within spell descriptions refer to the level of the caster unless otherwise noted.

Bingo, you got it. You always take any caster levels you have (arcane-or-divine) and toss them at the "X"/lvl conditionals regardless of the actual level of the spell or when you started being able to cast it. Time to go forth and punish the infidels!

Where it starts to get a little swirly is when you have a multiclass character with some non-casting levels and some prestige class levels with the (+1 level in spell casting class) features...or heaven forbid they multiclass into both arcane and divine classes just to spread more butter in the pocket watch.

*and I'm too slow because Lathiira is a hasted dire weasel

Just to clarify what Herbo said: it's the caster level of the relevant class that matters. A wizard 3/cleric 4 will get two magic missiles per casting and heal 1d8+4 damage from cure light wounds. Caster levels are tracked separately for each class.
