I just statted out an earth-themed sorcerer who uses the statue spell's long duration both for defense and for sneaking in certain areas.
However, sneaking doesn't work so well, when the followed sees the same statue over and over again (or worse, recognizes the statue as being the likeness of an enemy).
My question is this, when transforming into statue form, is there anything in the rules to reinforce the idea that it HAS to be a statue of you? In other words, could I transform into a statue of a gargoyle (or something else appropriate to the setting), rather than myself?

I would think yes since it describes equipment that is worn or carried.
Maybe a disguise kit and a crown or big floppy hat, even a great helm
So when you get ready to become a statue, put on the helm or hat. or the hood of your cloak, or place your hands in front of your face...
It seems there are alot of options and a new use for the bluff or disguise skills....

you could also add the spell alter self to your list
that way when you want to be a statue, have alter self already up, change how you look, and cast statue.
Disguise self or a hat of disguise would help make the statue look like someone else (humanoid of same size basically), but if someone were to touch you or bump against you, it may be obvious that something is wrong.
Hmm...you could add a level of rogue and sneak attack out of statue form, or just take advantage of denying them their dex for spells that require attack rolls.

With disguise self would you be able to make it not look like a statue?
