Wow, cool question. Hmm...four popped into my mind immediately, but the fifth took me a couple of minutes.
The four I'd definitely take are (in alphabetical order)
Axis & Allies
Scrabble
Settlers of Catan
Ticket to Ride
If pressured into a fifth game RIGHT NOW, it would have to be Chess. Monopoly might contend with Chess, depending on whomever else I get to play with after the apoc. :)
I'm assuming that these lists only include "games you can win," else the core rulebooks of D&D would HAVE to be my #1 choice (see parenthetical after my name). ;)

I'd quickly take
Axis & Allies
RoboRally
Hoity Toity (aka By Hook or By Crook)
Scrabble
The fifth would be lot harder. Blood Bowl, Bridges of Shangi-La, Titan (hey, an apocalypse leaves you with a lot of time on your hands, you know), and maybe an Icehouse set all come to mind. But I think I might go for an old-fashioned deck of cards w/poker chips.

I'd take:
Space Hulk 2nd Edition
Settlers of Catan
Backgammon
RoboRally
Poker
Okay, that last one is a min-max choice, since a poker deck gives you access to an near-infinite number of games.
Also, you can just make everything you'd need to play backgammon (or checkers, or chess, or mahjong, or dominos...I'm kind of defeating the purpose here, aren't I?)
As for Space Hulk, I'd try to sneak the contents of Deathwing and Genestealer into the box too. If that didn't work, I'd bring the Dungeon board game instead.
While I'd want to sneak in the expansions for RoboRally too, it wouldn't be the end of the world (any more so) if I couldn't.

Go (excellent, excellent)
Knightmare Chess (it's almost 2 games in one)
Blood Bowl (only if I have all the teams tho...otherwise it would get boring)
Carcassone (great great game)
Robo Rally (with all my boards and extra special rules...)
Yeah I think that about covers it...I could be happy with those games...
