Hi,
My group will be moving to Pathfinder in the next weeks. We're leaving away the 4E for reasons I'll keep for myself. So, as the DM, I bought the Pathfinder Core Rulebook and the first two modules of "the council of thieves" adventure path.
The question I have is where do I find the stats for the different "monsters/Animals" the summons spells can conjure?

They can be found in the Pathfinder RPG Bestiary (which released late last month) and can also be found in the Monster Section of the Reference Document

I believe everything you need to run the CoT AP is in the Bestiary, but for the first 2 installments, everything you need is in the free PDF download Bestiary Preview I and II.

We are in the process of fully statting out all summonable monsters and animals, as well as variant forms of monsters only referenced in other monsters, on d20pfsrd.com.

We plan to have all variant and summonable monsters, posted. We're working on it! In addition, we have very many of the monsters originally released in the various Paizo Adventure Paths, as well as ALL of the monsters previously released in the FreeRPG Day Bonus Bestiary (that were not included in the PRD).
Come on over and check us out. If you like us, stay awhile. Or better yet, move in. We've got extra bedrooms and lots of space. The only requirement is you help us sweep up the place now and then. If you're looking for a place to hang out (ie, spend time helping us work on the site) then just send me your Google ID and a note saying "I like the color of the curtains, can I hang a while?"

WoW ! Nice, I now have everything I need to make this a very good experience for everybody.
There is one information I haven't been able to find yet. In which year does "the council of thieves" take place? The only date I have is 4606 for the death of the good god but how many years since then?

4709 is the current year in Golarion (come January it will be 4710)

They try and avoid putting years on the APs to allow you to chose when they are set. However, books are designed to fit with a standard year s%*! of +2,700 years from and AD year to a AR year, so this year is 4709 as Andrew said (Neth 7th to be exact)
