Has anyone taken the Pathfinder character sheet and turned it into a form that can be filled out in Word, Excel, or Acrobat?

Yes there is and its called PFRPG_CS_v_0_6_3.1.xls

I've just posted a new version that includes full automation for all PRPG core prestige classes, plus lots of 3rd-party OGC. Once this one goes through a nice bug review, it will become the "official" version up at the Pathfinder Database link miniaturepeddler posted above.
