So lets say I talked my GM into letting me get a ring version of the Amulet of Mighty Fist, now lets say I got two of these and put some spells on them both, would the effects of both rings work on both of my claws, and would the Speed ability give me a total of 4 claw attacks (1 extra attack with each claw)
First why would you need 2 rings, the way it is worded in core it provides the bonus to all natural attacks or unarmed attacks.
"This amulet grants an enhancement bonus of +1 to +5 on attack and damage rolls with unarmed attacks and natural weapons. "
I wouldn't allow the two items to stack in any way, but you wouldn't need to have 2 either.
Speed says:
"When making a full-attack action, the wielder of a speed weapon may make one extra attack with it. The attack uses the wielder's full base attack bonus, plus any modifiers appropriate to the situation. (This benefit is not cumulative with similar effects, such as a haste spell.)"
So I would say that using an Amulet of Mighty Fists would only give you 1 more attack, although I would allow you to choose which natural weapon or which fist you used.
On my knowledge, one cant put spells to Amulet (Ring) of Mighty Fist. What you can do is to put "weapon" enhancements (see pg. 468) to the item instead of normal enhancements to unarmed / natural attack and damage bonus.
Technically, one shouldnt have more than one Amulet (Ring) of Mighty Fist, so stacking special abilities shouldnt be happening with multible items. Even more, Speed special ability wont stack with any other effect granting extra attack (inc. another Speed special ability).
In the end of the day, it is up to your GM nevertheless. If he allows you to have Amulet of Mighty fist in slot it isnt meant to be used, and then multible items... ye never know how much he allows-.-
Non like abilities would stack, but remember that the ring has to have a +1 enhancement on it for it's first bonus and that would not stack.
In Pathfinder the Amulet of Mighty Fists does not require a +1 before adding other meelee weapon special abilities, so he probably wouldn't need one for this ring.
However as a DM I would not allow two rings of these to stack.

Ok so first I would want it to be 2 rings because you can have the effects of 2 rings active at the same time therefore making their effects stack. I'm not saying I would be trying to get +10 on my attacks/damage I wouldn't allow the enhancement bonuses to stack either. What I would want is maybe an enhancement bones from one and weapon abilities from the other. Whats your reason for speed not working on both claws, the item does state that it effects all natural attacks and each claw is a separate weapon so it would not be breaking any rules according to the speed ability.

[EDIT] My wife just pointed out that the speed ability says that it grants an extra attack with that weapon not just an extra attack, thus making it possible to have an extra attack with each claw since they're separate weapons.
The speed ability wouldn't be stacking with anything it would be like wielding multiple weapons with the speed ability giving each weapon an extra attack separately .

It's actually debateable if this actually would allow you to get two extra attacks by wielding two Speed weapons. Personally, I've even argued in the past (though I was soundly disagreed with) that Speed/Haste do not stack with effects such as Rapid Shot and Flurry of Blows. That's beside the point though.
It's also debateable if the two claw attacks are in fact considered separate weapons. If you were to take the Improved Natural Attack feat, it would apply to both at once would it not? The Magic Fang spell would enhance both sets of claws at the same time (but not a bite). That's how I've always played it at least. This is the benefit of natural weapon sets, the downside being that you never gain iterative attacks.
The way I see this thread is that your DM has thrown you a bone here, allowing you to have an Amulet of Mighty Fists in ring form. I would thank the DM for his generosity and not try to take even further advantage.

Hmm it seems I didn't think about these things so I guess I have to agree then, you can only gain 1 additional attack with speed.
Now then what about the 2 rings would there abilities stack, could I make my claws +5 with a total of an additional +5 in weapon abilities.
