Ruth and I had a fight last night. Apparently she has decided that all I ever do is talk about getting the bestiary. I swear I only mentionedit once yesterday and that was to say tht if thre is a $5 service fee on the prepaid debit cards, that maybe we should look at other options in getting it.

I found free internet in Montreal, in spite of everyone's attempt to make me pay. Ate at Les Trois Brasseurs last night; crepes & coffee for breakfast. Seems pretty civilized. Getting a bit of "where's your suit?" attitude. Kiss my gauche Americain boohonkus.

No chicken marsala, I'm a recovering alcoholic so I try and avoid cooking with anything that has alcohol in it. I do have a good Chicken Castellina recipe that I swiped fro Olive Garden while I worked there if you would like.

Edit: I'd also be willing to give up my Paste e Fegioli recipe if you need something for the soup course.

My biggest concern is the sautee time of the chicken seems very short, but that may just be the result of the high heat and the flattened chicken breasts. I'm also concerned I won't be able to fit all the chicken I need for four people in one pan.

Thanks for the soup offer, but I think we're going to have salad, and there's going to be brie as an hors d'oeuvre, so I think we will be covered. Although if you felt like sending any recipes via FB, I would never complain :) I'm sure I will use them sooner or later.

Th cooking time is generally lower for flattened boneless breasts. Depending on theresipe, they may also be factoring in time for it to cook in the sauce as well.

Thanks. There was a great article by Monte Cook in the latest KQ about playing by the spirit of the rules. He pointed out that there was no game that was ever going to be perfect in the sense that someone couldn't find something to exploit. I suppose I should just be thankful that I've never run into anyone (other than the rules lawyer/overbearing optimizer) that needs to "win" a role-playing game.

Chicken Castellina
3 oz pancetta or bacon, diced
4 1/2 oz of butter, cubed
1 1/2 teaspoons garlic, chopped
3 oz sun dried tomatos, diced
18 oz heavy crem
18 oz milk
1 1/2 oz cornstarch
3 oz grated parmesan
4 1/2 oz smoked gouda, cvhopped
12 3/4 ounce artichoke hearts sliced
1 1/2 teaspoons dried rosemary
2 1/4 lbs boneless skinless chicken breasts cut into 1 to 1 1/2 inch pieces
3/4 teaspoon salt
3/6 teaspoon pepper
9 oz flour
2 1/4 oz olive oil
3 oz chicken broth
2 1/4 lbs of cook pasta (your choice)

In a 3 quart sauce pan or large pot, saute pancetta or bacon over medium-high heat until crisp and golden. Lower heat, add butter and melt. Add garlic and sun dried tomatoes and saute for aprox. one minute. Whisk in parmesan and goulda and melt. Once the cheese melts add everything up to the chicken and bring to a boil. Remove from heat and let stand uncovered. Mix the flour with the salt and pepper. Coat the chicken in the seasoned flour and shke off the excess. Throw flour away. Heat olive oil in large saute pan and add a single layer of chicken. Cook until the chicken is golden brown on both sides. Add chicken broth to th chicken and reduce. Once the broth has reduced by half add sauce and bring to a boil over medium high heat. Evenly distribute chicken and sauce over pasta nd garnish with chopped parsley.

Pasta e Fegiol
lb ground beef
1 small onion, diced
1 large carrot julienned
2 cloves garlic, minced
3 stalks celery, chopped
2 cans diced tomatoes
1 can red kidney beans
1 can great norther beans
1 15 oz can tomato sauce
1 12 oz can V-8 juice
1 tablespoon white vinegar
1 1/2 teaspoons salt
1 teaspoon dried oregano
1 teaspoon dried basil
1/2 teaspoon black pepper
1/2 teaspoon dried thyme
1/2 pound ditali pasta

Brown the ground beef in a large saucepan or pot over medium heat. Drain off most of the fat. Add onion carrot, celery, and garlic and saute for 10 miniutes. Add remaining ingredients, except pasta, and simmer for one hour. About 50 minutes into th simmer time, cook the past according to the directions on the package. When th pasta is al dente, about ten minutes, drain and add to the soup. Simmer the soup for 5-10 minutes and serve.

So I heard from the school. They have offered us the opportunity to do a homebound study. This basically means that for 30 days they will have him come in after school for an hour or hour and a half a day and he will do his work and study then. This will give me time to get him on the meds, see if the meds work, and get his IEP in place. If he qualifies for the IEP than legally can move him to any school I desire that has the programs I see that will suit him. And His Charter school has said they if the meds help nd things calm down, than he is welcome back. :D

That's good news, right? At least you know what's ahead of you. Have you seen a doctor about meds, yet?

I hope it all works out, and he can go back to the charter school.
