Normally I've got my subscription set up to ship things as the APs arrive, but it looks like that's going to hold up a ton of stuff until November. Normally I wouldn't care, but I'd like to get the Bestiary much sooner rather than later.
1) If I do a monthly shipment for October, is there a set date during the month the items will ship, or do all the items for the month ship when the last items anticipated for that month arrive?
2) Just so I'm clear, if I have items ship individually, each single book will be sent through UPS in its own package, even if they arrive in the same shipment you guys receive? Or if books A & B arrive at the warehouse together, those two books would be sent to me together?
3) As with the PFRPG Core Rulebook, I plan on getting two copies of the Bestiary. But as with the Core book, I was hoping to grab the second Bestiary if/when a second printing is made that would incorporate any errata. Would a second printing like that be far down the road? If so, would my best option be to not muck around with my shipments at all, and just place a separate order for a copy of the Bestiary that would ship as soon as it arrives in the warehouse?

They will all ship when the last October product arrives in the warehouse. If that happens in the first week of the month, then your monthly shipment goes out early. If that's the last week, you get it later.

The latter. If everything arrives at once, you'll get them in one shipment despite your settings. This setting mostly means that you don't ever want books sitting in the warehouse waiting to go out to you. It doesn't mean that they screw you on shipping by sending everything individually.

Someone from Paizo should be better at answering that question. I imagine that they had time to increase the print run of the Bestiary after seeing the success of the Core Rulebook, but it might also not be in as high of demand as players will not be buying it as much as GMs.

This is the one that left me most baffled. I thought I had understood it to work this way, but when I set the subs to "ship items individually" it then listed every item with a UPS shipping estimate. Made my blood run cold.
I think I'll just do the once a month for October then, as long as it's anticipated for the middle of the month.

Well... If you look now, you will see that the expected ship date for Pathfinder #27 has moved again. We are now expecting it to show up here as soon as next week, as opposed to November (which was what was going to hold everything up).
...of course, this could mean that Pathfinder #27 shows up before the Bestiary and then your Bestiary would wait for the next AP shipment (#28) which we still expect will be in November.

I'm going to echo yoda here a bit. "Hold for Monthly Shipment" means that you will get one shipment each month, which will go out when the last item (within your set of subscriptions), which is going to be released in that month, is released.
In this case, your Monthly Shipment for October would include the Bestiary, Seekers, Princes of Darkness, Map Pack Extradimensional Spaces, and Pathfinder #27

We will combine shipments as much as possible, so those books would go together.

My suggestion, based on what you've said here, is that you should probably switch to "Hold for Monthly Shipment".
As for your second copy of the Bestiary, it really depends on how soon you want the second one. We currently don't know whether or not a second printing is going to be warranted, and if we pressed the button right now to make it happen as soon as possible, it wouldn't be available until January or February. And we probably won't know whether or not a second printing is warranted for another month, at least.
That being said, a second printing would definitely contain any errata generated up to the point at which we "press the button" to make it happen.

We don't have absolute certainly that any two products will arrive simultaneously until they actually arrive, so we must assume that everything will arrive separately and thus show you a worst-case scenario. In reality, anything that then actually arrives together would ship together, for a correspondingly lower shipping fee.
