As for gambling, I already told you where the casinos were, but as far as I know only Jo wanted to go.

The temple to Norebo is dominated by a massive 8 sided die floating in the center. People play all sorts of games around the hall, though small alcoves dot the area here and there for more traditional prayer.

Depends on the game. If you really want to gamble some money I can boot up Fallout: New Vegas and give you a spin on the Roulette Wheel or Slots and see what the payout is. =)

Though, my character has max Luck and still has not ever even broke even at Roulette.

Easily enough, Craps and Roulette and other simple games of chance. You could play Poker or skill based games of that nature, but that would come down to a Profession: Gambling check for obvious reasons.

Besides, Norebo prefers pure chance and so do his priests.

Let's run a simplified version.

Roll 2d6. If you get a 7 or 11, you win.

If you roll 2, 3, or 12, you lose.

If you roll anything else, roll again until you either get the same number you originally rolled (win) or 7 (lose).

Sample game:

2d6 ⇒ (6, 2) = 8

Round 2:

2d6 ⇒ (2, 4) = 6

Round 3:

2d6 ⇒ (6, 4) = 10

Round 4:

2d6 ⇒ (4, 2) = 6

Round 5:

2d6 ⇒ (2, 6) = 8

Winner! You get 120 gp back (20 gp profit).

I can summon some more monsters, maybe do a bit of damage. Also Jo, I can cast endure elements on everyone and still have plenty of spell slots? Would that be alright with you?

Jo and I could burn slots to get fly on all of us - do you guys have good ranged options if we do so?

Before contracting their boat, Chimon revisits the Vault of Abadar and changes his money back to platinum. Then, keeping the coins split up in various pockets on his person, he takes to the streets, looking for a place that'll sell a specific kind of scroll.

Knowledge (local): 10 + 12 = 22 to find . . . and buy . . . a scroll of stone to flesh.

There are three boats leaving port within the next few days which will stop off in Qadira Two are merchant vessels (and so would take you on as laborers or for a passenger fee), and the last is a passenger ship, which is a bit more pricey, but more luxurious as well.
