Slight quibble, granted this is barring any modifications you may have made, but peryton's are normally medium-sized. Given the pickle we are in with the enemies here... I hope it is unmodified. *fingers crossed*

Only from when I ran the fight. When I did my maps, I put it in as a large too, but wondered why they'd keep a large flyer indoors. I always thought they were from back in the day. Hard to pick up and drop men as a medium creature by PF flying rules.

I checked the description, although I don't specifically recall looking at the size. I dunno, they just sort-of feel... bigger. I think the original 3e description is in the 3e FR monster supplement (from the 90s?). Maybe they have shrunk, like other things e.g. Mars bars, in the current economic climate of austerity.

If that is a solid wall between AM7 and AM8, Sol should be fine, as you can't AoO across a hard corner. I don't remember if it's because you can't AoO with cover, or hard corners specifically are called out.
EDIT: Okay, it's cover specifically that prevents AoO's, and hard corners are cover.

Yes, the hp rule is still in effect. But it's 1/2 minimum, not 1/2 + 1.
Up to you on the Hunter's Bond option. If you put your stat gain into WIS instead of CON you'd get two rounds if you went for the companions option, although it still costs a move action (and I checked, that doesn't seem to improve at higher levels). As favoured enemy bonuses are untyped they would stack with other bonuses.
Otherwise, an animal companion can be helpful in combat, and there are mythic options which apply to them as well, although given the various resistances that many of the likely enemies will have their natural attacks may be of limited use. Animal companions are available which are suitable for a near-arctic environment (although see below).
As an aside, as Jod is "culturally appropriate" as being from the Realm of the Mammoth Lords, I reference the mammoth rider prestige class. He doesn't qualify for it yet (and won't for a while) but it might be interesting to aim for, if you have the inclination. Mythic mammoth animal companion, anyone? (An elephant/mammoth companion is available from the off, although it isn't big enough to ride for a while. See also this for inspiration on how a baby mammoth might behave - a classic of British television.)

The video with baby Lulu is great. I think I have talked myself out of the animal companion: 1) A move action for two rounds of untyped bonuses for my allies doesn't sound like a terrible trade. 2) We have a ton of players on the allied side already - I don't think I need to add another to the mix.
While the Mammoth Rider sounds like it could be fun, it will take a long time to develop. However, reading the description reminds me - and perhaps we've discussed this already - are you familiar with the spell-less ranger from the New Paths Compendium by Kobold Press? As the name implies, it drops spellcasting from the ranger's abilities in favor of some others. It may be a bit overpowered as written in a party like ours, but I would be interested in your thoughts of a possible variant because I'm not terribly keen on Jod becoming a spellcaster, so swapping spells for something more martial is intriguing.
That said, I can certainly take advantage of the ranger spell list for self-buffs and healing, so my nose won't be out of joint if you aren't interested in considering the idea, either.

Retraining is in the rules, so I would go with those. You can retrain at 5th level, and every 3 levels after that. So maybe wait until 5th level for Minor Image and retain out Silent Image then, though spell choice is obviously up to you.

While the Mammoth Rider sounds like it could be fun, it will take a long time to develop.
Maybe not as long as you think. This AP is interesting as the PC power levels are really high compared to others. The PCs are getting to 20th level since the added mythic levels mean they can kill tougher enemies, and gain a greater concomitant level of xp, than other PCs.
That said, I'd probably run with the Companions options, as we have a PC with a friend already and the bonuses are handy and stackable with other buffs.
Regarding the spell-less ranger, there's actually an official Paizo ranger archetype called the skirmisher (there's also, confusingly, an official Paizo fighter archetype with the same name - it's not that one) which does the same thing. Since it's official, I'd prefer you to use that.

Looking at it some more, I think they over-compensated for the loss of spells in that archetype. It's one of those "why would you ever choose something else" choices which as a rule of thumb often means it's too good.
The skirmisher sounds like a reasonable choice. It won't conflict with my current archetype and doesn't go into effect until this level (when I would lose spells) or the next (when I gain tricks), depending on how you look at it, so I think I will make that change.
